Making lefse is a new Jackson family tradition

How do you make lefse? That is the question that Fern Jackson’s daughter Carolyn was asking her from her home in Tucson, Arizona. Fern thought it would be too hard to explain all the steps to making lefse on the phone so she asked if it would be possible for her to come home to Clearbrook and they could do it together.
Together they did, as all of Fern’s children decided that it would be fun to make lefse together. They said they had not made it before but they had done enough eating.
The group included Carolyn Carter from Tuscon, Arizona, Pam Casio from Grand Rapids,  Sheryl Berg from Gonvick, Kelly McConkey from Brainerd, Bradley and Mary Jo Jackson from Clearbrook with their mother Fern.
The group got together at Fern’s apartment in Clearbrook and they boiled the potatoes, riced them and formed the dough into a log to put in the refrigerator until the next morning.
The next day they were set with their aprons, rolling pins, pastry cloths, electric lefse grills, lefse sticks and some were even rosemaled. They gathered in the meeting room of the center were Fern’s lives to start the process. It did not take long before the smell of the lefse went down the hall in the building. Other residents came in to see what was going on and to offer suggestions as to how to make the best lefse. They were really waiting for a taste.
They all agreed that a white dish towel helped to keep them moist while they continued to cook the rest.
The group decided that the best way to eat the holiday treat was with butter and sugar.
They were having such a good time they called this the first annual lefse making day and they plan to do it again.
