Fresh Strawberry Cake & Strawberry Cream Cheese Frosting

One of the refreshments at the Doug Ohman program, America’s 250 was Fresh Strawberry Cake with Strawberry Cream Cheese Frosting.  The recipe was requested by several guests including a 10 year old girl, who went out of her way to find someone who could give her the recipe.  She enjoyed two pieces and took one to go!  Here ya go!

Fresh Strawberry Cake & Strawberry Cream Cheese Frosting 

  • 1 box white cake mix (15.25 oz)
  • 1 3/4 cup fresh strawberries, puréed (1/2c reserved for frosting)
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 3oz pkg strawberry jello gelatin (I used cherry for a more fruit forward flavor.9
  1. Preheat oven to 350°F.
  2. Grease a 9×13-inch pan.
  3. Purée fresh strawberries in a blender or food processor until smooth.
  4. Combine the cake mix, 1 1/4c strawberry purée, eggs, oil, and jello.
  5. Beat with an electric mixer for 2 minutes or more. Important to incorporate the strawberries well.
  6. Bake: Two 8- or 9-inch pans: 25–30 minutes, 9×13-inch pan: Bake in preheated oven 35-45 minutes until toothpick inserted into center toothpick if comes out clean.

*Cool completely on a wire rack before frosting.

Fresh Strawberry Cream Cheese Frosting 

  • 4oz cream cheese, softened
  • 1/4 cup (1/2stick) butter, softened
  • 2-3 cups powdered sugar
  • Remaining strawberry purée
  • 1 teaspoon vanilla extract

Directions

  1. Beat the cream cheese and butter until light and fluffy (2–3 minutes).
  2. Beat in the vanilla
  3. Mix in the fresh strawberry purée.

Then gradually add the powdered sugar until smooth. If the frosting is too soft, beat in an additional powdered sugar, a little at a time.

Note: Keep refrigerated until ready to serve, refrigerate left overs
